We have been experimenting with different cast iron recipes and I personally think this one was a delicious. It was spin off of one of Laughing Spatula’s recipes. I didn’t have all the ingredients on hand so we used what we already had and followed her cooking instructions.
This is a perfect recipe for two to have left overs, or for a quick family dinner. The best thing about this dish is you can adjust to your own preference, just follow cooking instructions.
I definitely recommend over stuffing your chicken, don’t worry about it being sloppy looking, it will add perfect flavor to every bite!
- Ingredients:
- 2-4 chicken breast
- Pesto
- Capers
- Sun dry tomatoes – julienne cut
- Mozzarella cheese
- Olive oil
- Salt
- Pepper
- Mozzarella cheese

- 2-4 chicken breast
- For sauce:
- Greek yogurt
- Pesto
- Salt and Pepper to taste
- Greek yogurt
- Prep:
- Preheat oven to 400
- Cut the chicken horizontally to create a pocket to be stuffed. DO NOT cut all the way through.
- Start to stuff the inside of the chicken with pesto, capers, sun dried tomatoes and mozzarella.
- Fold back close. Don’t worry if it’s a bit messy looking, and remember overstuffed is best!
- Lightly drizzle olive oil onto chicken.
- Add salt and pepper outside of chicken to taste.
- Preheat oven to 400
- Cook
- Heat cast iron, or whatever oven proof pan you have, on medium high heat.
- Add a little olive oil to pan
- When the oil starts to sizzle carefully add the chicken with tongs
- Sear on each side about 2-4 minutes depending on size of chicken breast
- Finish baking in oven for about 8-10 minutes, or until chicken reaches 165 degrees.
- If you are adding gnocchi or pasta with your meal, this would be the perfect time to start that.
- Heat cast iron, or whatever oven proof pan you have, on medium high heat.
- Make pesto sauce
- Approximately about half a cup of Greek Yogurt
- Add a spoonful or two of pesto
- Adjust to personal taste or amount you would like
- Add a touch of salt and pepper to taste
Plate chicken and gnocchi, top with sauce and enjoy!
